Strawberry chocolate chip muffins
Delicious strawberry muffins with dark chocolate chips. Healthier version with oats.

- 2 1/2 dl quick oats
- 1 1/4 dl brown sugar pressed
- 2 1/2 dl yogurt
- 3/4 dl vegetable oil
- 1 egg lightly beaten
- 2 1/2 flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 dl smashed strawberrys fresh or frozen and melted are fine
- 1 dl dark chocolate chips
Preheat oven to 200 celsius.
Smash your strawberries.
Mix together oats, sugar, yogurt, oil and egg. Let sit about five minutes.
Mix together flour, salt, baking powder and baking soda.
Mix flour mixture to oat batter, mix it carefully, don´t over mix.
Add smashed strawberries to a batter. Again mix enough for strawberries to blend into the batter but don´t over mix.
Add chocolate chips carefully folding the batter.
Divide the batter equally into twelve cupcake liners.
Bake in middle of the oven for 20 minutes or until toothpick comes out clean.
Let cool for five minutes and then transfer on cooling rack.
